  • The Delecto is equipped with collector trays under each grate. These trays serve a dual purpose. When the Delecto is ready for cooking, just pour some water, wine, beer or stock through the grill into each tray, to infuse your foods with refined flavours. Never use liquids containing over 25% alcohol because they could catch fire. The collector trays also ensure excellent control over cooking by eliminating flare-ups of fat melting off the food.
  • For a different flavour, close the blower at the end of the cooking, add a handful of damp wood chips (apple, hickory, etc.) to the burner and let them smoulder for a few minutes until the food has the desired taste.
  • If you plan to cook something slowly, leave aside a few cubes of wood ready to add to the combustion chamber.

Maintenance and manipulation

  • After cooking, add a little wood or leave the remaining wood to burn at high temperature (IMPORTANT: Leave the cover open before turning the blower to maximum). This will burn off food and fat residue so that it can easily be removed with a brass barbecue brush.
  • After emptying the ash, leave the blower on for a few minutes to cool down the barbecue faster.
